Shoryu Ramen releases DIY kits

Shoryu Ramen rolls out DIY kits and delivery so lucky Londoners can get an authentic tonkotsu fix at home.

Many of us have probably attempted to whip up a ‘fakeaway’ over the past few weeks, but it might not have been quite as nice as the real thing. And if you’ve felt like your homemade ramen bowls have been missing something, Shoryu Ramen is about to come to your rescue.

The restaurant franchise has released the DIY recipe for its famous ‘nitamago eggs’. The Japanese staple is a marinated soft-boiled egg, which sits in the heart of every one of Shoryu’s steaming ramen bowls. A handful of lucky customers will be able to get their hands on a freshly made one, as the franchise’s Shoreditch location is rolling out a selection of dishes and DIY kits that can be delivered to your door. But if you’re not one of the lucky ones, Time Out has shared the full recipe so you can have a go at making your own nitamago eggs.

Start with the best eggs you can afford (Shoryu recommends Clarence Court or Burford Brown eggs) to make sure they’ve got a rich orange yolk. Then, boil your eggs for seven minutes. As they cook, mix up tsuyu, cooking sake, soy sauce, mirin, pepper and ginger and heat. Once both your eggs and sauce have cooked, peel the eggs and leave them in the delicious marinade for up to two days before eating. Sounds pretty simple, doesn’t it?
