Star Chef Joins WOLF Franchise On Stoke Newington High Street

Chef Karla Knowles ditches Michelin star restaurant to pay tribute to Italian traditional cuisine at Wolf.
Wolf franchisee Antony Difrancesco lets his Italian roots shine through the new winter menu of his Wolf restaurant in Stoke Newington High Street. To help him perfect his menu, Difrancesco hired star chef and Michelin renegade Karla Knowles. Family recipes are revisited by chef Karla who, after her stint at the Michelin starred Petersham Nurseries, has created a hearty yet refined winter menu.
Wolf restaurant in Stoke Newington High Street is as sophisticated as it is authentic. The baccala fritto is a cod delight – delicately salted cod with sprout tops lightly fried in tempura batter and sprinkled with sparkling water for extra crispiness. One of Karla’s favourites is her gnocetti, in other words, fried gnocci. Apparently, it is simply out of this world. They are light with deliciously flavoured morels and chanterelles that are subtle and earthy. Another star dish is the barrochio feather blade braised British beef, marinated in red wine and cooked overnight, is so tender it falls off the fork before it reaches your mouth. It is served with salsa verde that adds a lemony kick to the polenta.
As in true Italian tradition, Wolf’s new winter menu features homemade pasta in all colours and sizes. The bucatini is like a thick spaghetti, al dente and topped with venison shin porcini ragu. The truffle potatoes are hearty yet light and fluffy like clouds with a slight hint of rosemary. A culinary haven that takes you away from the hustle and bustle of the high street, Stoke Newington high street Wolf’s restaurant is a shining star of authentic Italian food.
